New Feature: Head Chef Paul’s Recipes

At Fairfield House, its safe to say we are very passionate about the food we serve our residents.  We use locally sourced ingredients. Our meals are fresh, nutritious and varied and we cater for a variety of dietary needs.

Should you not fancy something on the menu our kitchen team are always more than happy to prepare you anything you fancy.

We will be sharing a few “Fairfield Favourites” to get your taste buds tingling!

Pauls Lemon Shortbread squares, the home’s favourite, one slice is never enough!


For the Shortbread
Ingredients

125g unsalted butter
2 tbsp icing sugar
55g white granulated sugarlemon shortbread
180g plain flour

For the Lemon Curd
Ingredients

2 Tbsp finely minced lemon zest (about 2 medium lemons)
2 large egg yolks, lightly beaten
3 large whole eggs, lightly beaten
113g unsalted butter, melted
150g cup granulated sugar
1/2 cup freshly squeezed lemon juice (about 2-3 medium lemons)

Fish and Chip Friday at Fairfield House

Our Head Chef Paul Fenner, before joining Fairfield House in 2008 successfully ran his own bistro. Paul’s specialty is seafood, hence fish and chip Friday is not only immensely popular with our residents but also tends to be a busy day for visitors who enjoy Paul’s delicious fish and chips.

Freshly caught fish from Lyme Bay encased in a bubbly but crisp batter served simply with thick cut chips and a slice of lemon is the perfect end to the week.
