Dining at Fairfield House

At Fairfield House we are passionate about food and pride ourselves on providing fresh, nutrious and delicious meals to all our residents and service users.

Our menu changes regulary to suit the seasons and we like to use locally sourced ingredients where possible. Below are some example of some of the delicious meals our Head Chef Paul cooks for our residents.

Paul’s Beer Battered Cod and Chips

The fish is locally sourced and is delivered fresh to Fairfield House. This is the most popular dish with residents and we also have regular guests who come especially for cod and chips on a Friday! 

Ingredients

For the fish

50g plain flour

50g cornflour

1 tsp baking powder

turmeric

75ml lager beer

75ml sparkling water

about 1 litre sunflower oil, for frying

400g fillet sustainable cod, hake or haddock, halved

For the chips

750g potatoes, Maris Piper or Desiree, peeled and sliced into thick chips

2 tbsp plain flour

2 tbsp sunflower oil

Paul’s Lancashire Hot Pot, a classic melt in the mouth, hearty winter dish!

Ingredients

2 tbsp olive oil

1kg/2lb 2oz neck of lamb, chopped into bite-sized pieces

4 lambs' kidneys, cleaned, trimmed, cut into quarters

2 onions, peeled, sliced

½ tsp salt

1 tbsp plain flour

250ml/9fl oz lamb stock

1 sprig fresh thyme 

2 fresh bay leaves

1 tbsp Worcestershire sauce

50g/2oz butter, cut into cubes, plus extra for greasing

1kg/2lb 2oz potatoes, peeled and sliced

salt and freshly ground black pepper

Ingredients

For the base

600ml/1 pint full-fat milk

25g/1oz butter, plus extra for greasing the dish

1 lemon, zest finely grated

50g/2oz caster sugar

3 free-range eggs, yolks only

75g/3oz fresh white breadcrumbs 

For the meringue

175g/6oz caster sugar 

3 free-range eggs, whites only

For the fruit jam

200g/7oz fresh mixed summer fruits or 500g/1lb 2oz frozen. (Alternatively you can use raspberry jam if you prefer.)

200g/7oz caster sugar (or to taste)
