Paul trained to City and Guild standard at Bournemouth College; he gained his work experience in various hotels before joining the restaurant trade. He ran his own successful bistro for 5 years and only gave this up when his young family came along. Fairfield was pleased to welcome Paul as head chef in 2008, his speciality is seafood, and many relatives often visit on a Friday to enjoy Paul's freshly prepared fish and chips.
